In a wholesale food premises or a food production area, water damage is a food safety matter and not just a building one. The question is not only whether a surface can be dried but whether it can be returned to a condition that satisfies the standard and, in practice, the auditor.
That shifts the scope. Porous materials in a food handling area generally come out rather than being dried in place, surfaces need documented cleaning and sanitising, and the operator needs evidence in hand before resuming. We scope on that basis from the start rather than drying first and discovering the constraint at reopening.
When a water event threatens refrigeration, the product is the priority and the building can wait. Refrigerated and frozen stock fails specification quickly once plant or power is interrupted, and unlike a wet floor it cannot be recovered.
So our sequence in a cold store is to protect plant and power, then extract, then dry. Cool rooms themselves are also slow and awkward to dry — insulated panel construction holds water inside the panel core, and the cavity behind a cool room lining stays damp long after the room reads dry at the surface.
A distribution shed floor is measured in thousands of square metres. Standing water across that area is a pumping and extraction problem before it is a drying one, and the equipment needed is different in kind rather than just in quantity.
The practical constraint is usually electrical. Older industrial boards will not carry the drying load a large wet floor needs, so establishing what the site can supply and arranging temporary power is part of the first attendance rather than an afterthought once equipment starts tripping.
